Boneless Chicken Breast

1 pack Pre-Cut Diced Chicken Breast

1 tablespoon taco or fajita seasoning

4 12-inch tortillas

4 large eggs, whisked

1 avocado, peeled, pitted and sliced

1 cup shredded Monterey jack or cheddar cheese

1/3 cup salsa fresca

Salt and pepper to taste

Step 1
Season chicken with seasoning blend. Heat a large saute pan over medium heat. Once hot, add oil to pan, followed by the diced chicken. Cook for 10 to 12 minutes, stirring periodically. Cook chicken to an internal temperature of 165 F. Remove chicken with slotted spoon and reserve until ready to assemble burritos. Place pan back onto stove over low heat.

Step 2
Pour whisked eggs into pan, season with salt and pepper and scramble until cooked through.

Step 3
Assemble burritos: Divide ingredients evenly and layer in the center of each tortilla. Fold sides of each tortilla over filling and roll, tucking in the edges along the way.
