MEAT

Clod, or the beef shoulder, is what you know as beef chuck.

METHOD

We start off with 15-18 pounds of pure beef cooked to fork-tender perfection. Rubbed with only salt and pepper, we smoke it in our barbecue pits for 4 ½ hours (or ’till it’s right).
